Marvelous Meal-Planning Monday!



Welcome to a Flawless Monday!


The weekend has passed and we are off to a fresh start. Mondays are often hectic however, with a little planning Mondays will go from dreaded to a fresh start. If you have a family or are a party of one meal planning will make your week go by flawlessly. Below is a quick easy meal that you can make utilizing our John H.Moody Farm's 80/20 grass-fed ground beef.


Keto Ground Beef Cauliflower Rice Bowls with Chipolte Crema:


Ingredients for the rice:

1 12 ounces package of Cauliflower Rice

1 Tbsp Coconut Oil or other cooking fat

1/2 tsp sea salt

1 Tbsp fresh lime juice

1 clove of Garlic

1/2 cup of chopped onions ( Vidalia preferred)

1 Tbsp jalapeño pepper minced

1/2 tsp onion powder

1/2 tsp Ground Black Pepper

1/2 tsp garlic powder

Dash chipotle powder


Ingredients for beef:






  • 6-ounce package of 80/20 John H. Moody Farm's Ground Beef

  • 1 Tbsp coconut oil or other cooking fat

  • 1/2 tsp sea salt

  • 3/4 tsp onion powder

  • 3/4 tsp garlic powder

  • 3/4 tsp of ground Black Pepper

  • 1 tsp cumin

  • 3/4 tsp chili powder

  • Chipotle powder To taste

  • 2 Tbsp tomato paste

  • 4 Tbsp water


Other ingredients

  • one small Avocado for garnish

  • one heirloom tomato

  • one lime

  • 1 Tbsp of sour cream

  • 6 ounce can of Chipotle/Adobo Paste


Instructions:


For the cauliflower rice:

Heat a large skillet over medium heat and add coconut oil or other fat. Saute the chopped onions and clove of garlic until tender and fragrant. Add the riced cauliflower and stir to coat. Cover skillet and cook for about 2-3 until desired tenderness.


Uncover and stir, then add the jalapeño pepper, salt, seasonings, and lime juice. Cook and stir another minute or two uncovered until you have desired texture, then remove from heat.


Ground beef:

Meanwhile in a separate skillet (or the same one after cooking the cauliflower rice) heat 1 tbsp coconut oil over medium-high heat.

Crumble the beef into the skillet and break up lumps with a wooden spoon or spatula. Add the salt and all of the seasonings. Cook, stirring occasionally until browned. Do not drain the fat. Lower heat to medium-low and add the tomato paste and water, stir to combine. Continue to cook and stir until thickened, then remove to a separate bowl.


Chipotle Crema:

In a small bowl combine 2Tbsp of sour cream, 2Tbsp of Sour Cream, 1tsp of water: add water until desired consistency is reached. Salt and pepper to taste.


*To assemble the bowls, begin with the cauliflower rice, then layer the beef, tomato, avocado and drizzle with the chipotle crema
